Recipes for Pheasant Breast

2 lb pheasant

2 cups extra virgin olive oil

2 cups sliced mushrooms

3 large onions

4 cups chicken broth

2 cups flour

1/4 lb butter


Start by combining the butter and olive oil in a frying pan. Next cut up the pheasant into leg and breast portions. Then roll the pheasant portions in the flour and brown it up in a frying pan for 5 mins, turning half way through.

Now chop up the onions, and sauté them with the mushrooms in the same pan until cooked through. Place the pheasant on top of onions and mushrooms then pour the broth over pheasant. Cover and simmer for 1 hour.

Serve over noodles or rice.
