Turkey Cleaning Tips: After the harvest of your wild turkey you are going to have to decide how you want to clean your bird. There are a number of ways to clean a turkey but your decision should be made on how you would like to prepare it. The easiest way to clean your turkey is to skin the bird. To skin your bird start by making a small cut in the center of the breast, be sure not to cut into the meat of the bird. Once you have made the cut try to tear the skin off of the carcass of the bird. This can be tough so use a knife to help cut the connective tissue between the skin and the muscle. Once you have made it down to the legs, wings and head use a heavy game shears to remove the feet, wings, and head. Now all you need to do is to remove the entrails of the bird by placing your hand inside the cavity and pulling them out. Wash the bird in water to remove blood and feathers. If you want to roast your bird you will need to pluck it. You may pluck the turkey dry but it may be difficult to loosen the feathers. A better way is to heat a large pan of water to 140 degrees and dunk the turkey up and down in the water 10-15 times. This will help loosen the feathers and will allow you to remove them easily. If the feathers are not easy to remove dunk the turkey in the water and test the feathers again. Pluck down to the legs, wings and midway up the neck. Then use game shears to remove the wings, head and feet. Remove the entrails and wash the bird with cold clean water. Allow the bird to cool in cold water.
