Venison Loin Recipe

Ingredients

1 ½ -2 pound venison loin
3 ounces of Shiitake mushrooms
8 ounces of cremini mushrooms
¼ cup olive oil
1 pound skinless chicken breast
¼ cup parsley leaves
¼ cup chervil leaves

Wash all of the mushrooms to remove any dirt. Remove shiitake stems. In large pan place oil and mushrooms with a sprinkle of salt and pepper. Cook mushrooms until tender. In food processor or blender chop chicken, mushrooms, parsley and chervil until finely blended. Place ¼ inch of the processed mix on a greased cookie sheet (should just be enough to set venison loin on without it touching the sheet). Place venison on top of mix on cookie sheet and cover the venison with the rest of the mixture. Cook in oven at 350 until internal temp on meat thermometer shows 155. Remove from oven, let rest for 5 minutes and serve with wild rice.
