Field Preparation of Venison
Taking care of your deer in the field is the first step in preparing a great meal of venison. As soon as you have harvested your deer you will need to remove the entrails. This is a simple task but it is always helpful to have an experienced person help you the first time. Try to keep the deer as clean as possible.
After the deer entrails have been removed the deer should be hung up to cool. The deer can be hung up either head up or head down. We recommend hanging the deer head up as any excess blood from dressing the deer will not linger in the chest cavity. The deer may be hung for up to a week if temperatures are between 35 and 40 degrees. If the temperatures go above 40 degrees then the hide should be removed from the deer and the carcass should be cooled in a freezer or cooler.
Many hunters travel to their hunting destination and will need to travel to a processing facility or their home with the deer. Avoid placing the deer out in the open air where, dirt, fumes, and other debris can contaminate the deer. Plastic works great to cover the deer during travel. Again, try to keep the deer as clean as possible.
