Smoked Goose Recipes

Ingredients

One large goose
1 Tbsp sugar
1 tsp saltpeter
1/3 lb salt
option: garlic clove

Clean goose, removing wings, legs, fat and skin. Separate the back and breast. Scrape the meat from the bones of neck and back, get rid of all tissues and tendons. Chop goose very fine. Season the legs and breast and fill the neck with salt. Rub goose will with sugar and saltpeter (and optional garlic). Place in a stone jar. Cover with cloth and place weights on top to keep meat under brine ( this will form). Set in a cool place for 7 days, turning occasionally. When ready, take out of brine, cover with gauze and cook in smoke oven. Serve cold, thinly sliced. We hope you enjoy this great smoked goose recipe.
