Smoked Salmon Spread Recipe

Ingredients

1 can of smoked salmon
1 pound cream cheese
¼ teaspoon lemon juice
1/8 teaspoon dijon mustard
2 tablespoons green onions chopped
2 tablespoons parsley chopped
pepper

Mix ingredients in food processor for smooth spread or mix by hand. Serve with crackers.

When you need a snack. Nothing beats this smoked salmon treat.

Smoked Salmon Salad Recipe

Ingredients

½ cup smoked salmon
10 to 15 small red potatoes
¼ cup sour cream
¼ cup onion dice
1 tablespoon capers
2 tablespoons horseradish (may add more as desired)
2 tablespoons olive oil
1 teaspoon dried dill

Cut potatoes into quarters and toss in bowl with olive oil until potatoes are thoroughly covered with olive oil. Place potatoes in pan and put into 400-degree oven for 30 minutes, do not overcook, as the potatoes will crumble. Remove potatoes and allow them to cool.

In large bowl mix salmon, sour cream, horseradish, capers, onions and cooled potatoes. Add salt and pepper to taste. Sprinkle with dill.

Smoked Salmon Soup Recipe

Ingredients

¼ cup butter
2 strips bacon fried crisp then chopped fine
1 small onion chopped
1 ½ cups red potatoes diced
½ cup diced celery
2 cloves of garlic finely chopped
1 ½ teaspoons dried tarragon
¾ teaspoon dried thyme
¾ teaspoon dill weed
½ cup flour
7 cups of fish stock
1 ½ teaspoons paprika
6 ounces of smoked salmon diced
1 bay leaf
1 tablespoon lemon juice
1 ½ teaspoons Worcestershire sauce
splash of Tabasco sauce
¾ teaspoon pepper
2 teaspoons salt
¼ cup white wine
1 cup half and half
¼ cup fresh parsley chopped

In large pot melt butter over medium heat. Sauté onion, celery, potatoes, garlic, thyme, tarragon, and dill until onions are clear. Reduce heat and add flour, paprika, bacon, and fish stock stirring well. Add smoked salmon, bay leaf, juice of lemon, tabasco sauce, salt, wine and Worcestershire sauce. Bring ingredients to a boil and simmer for 25 minutes or until reduced to desired level. Stir in half and half and parsley before serving.

Smoked Salmon Fettuccine Recipe

Ingredients

1 cup smoked salmon
2 tablespoons butter
½ teaspoon white pepper
½ teaspoon nutmeg
1 tablespoon fresh dill chopped
2 tablespoons grated parmesan cheese
1 cup half and half
pasta of choice

In saucepan over medium heat, heat half and half and butter near boil, be sure to stir continuously. Simmer until reduced ¼ to 1/3 and add white pepper and nutmeg. Stir in salmon and serve over pasta. Cover with parmesan cheese and dill.

Smoked Salmon Appetizer Recipe

Ingredients

16 ounces of Smoked Salmon
1 cucumber
8 ounce cream cheese softened
¼ cup scallions chopped
2 tablespoons dijon mustard
salt and pepper to taste

Mix cream cheese, scallions, salt, pepper, and mustard. Cut cucumbers into slices and spread cream cheese mixture on top, add a piece of smoked salmon.
