Catfish RecipesCatfish is probably one of the most popular fish in the United States and for good reason. Catfish are widely distributed, fun to catch and great on the table. We can't think of a more versatile fish for cooking. Whether you like fried catfish, baked catfish, blackened catfish or cajun style catfish we have a recipe for you.Catfish Cleaning Tips - Catfish Recipes Catfish are easy to clean but require you to clean them a bit different than other fish. Be careful to watch out for their pectoral fins which contain a sharp point that can cause puncture wounds. The easiest way to clean catfish is to make a small incesion near the gill plate so you can get a hold of the skin with a pliers. Once you have grabbed the skin with a pliers peal the skin down towards the tail. Repeat the process on the other side of the fish. At this point you can do one of two things. 1) Fillet the fish as you normally would starting at the gill plate and working down along the spine towards the tail. 2) Cut just behind the dorsal fin and underneath towards the head of the fish. Break spine and remove the head of the catfish. Remove entrails. You should be left with a skinned catfish that looks similar to a cleaned and gutted salmon. This works excellent for baking.
