Barbecue Elk Rib Recipe

Ingredients:

elk ribs 5-6 lbs

buttermilk for marinade

1/2 cup red wine

1 1/2 cups water

1/2 cup brown sugar

1 cup your favorite jam or jelly

1/2 cup diced onion

1/2 teaspoon dry mustard

1/2 teaspoon garlic powder

1/8 teaspoon cloves

salt & pepper to taste

Directions:

Start off by marinating the elk rips in buttermilk over night. This is great for tenderizing the meat.

Next combine all the ingredients for sauce in a bowl mixing together well. Place ribs in roasting pan(5 quart) stack in 2 layers. Bake for 1 hr at 325.

Next pour sauce over the ribs and bake for approximately 1 1/2 hrs at 350 until they slightly char on top.

Now turn ribs over and cover. Bake for another 1/2 hr until ribs are tender. Serve with sauce from pan.

    Why is this called “Barbecue” if you’re roasting the ribs in an oven? Weird.
